FOUZOO

In 2019 Fouzoo restaurant in Bratislava, Slovakia, invited me to collaborate with guest chef Tom Levy to create an extra special tasting menu available for three nights only.

Together we created a 10 course tasting menu pairing food courses with cocktails, inspired by Asia, mixing Asian and local flavours.

Cocktails served:

  • Campari caviar

  • Apple eau de vie air

  • Lychee martini ‘lychee’

  • Hot sake ‘pearl’

  • Quinine and clarified pineapple noodles with Ceylon tea infused gin ‘soy sauce’

  • Steaming Tatratea iced tea

  • Becherovka floss dim sums filled with dehydrated Becherovka crystals

  • Erupting volcano with shochu, yuzu and jasmine foam

  • Watermelon ‘nigiri’ infused with coffee liqueur and eau de vie, served on top of milk foam ‘rice’

  • Earl grey infused Japanese whiskey served with earl grey and condensed milk mochi
